It’s February now and you’re probably expecting another post on the month of love, but let’s talk about loving ourselves through healthier eating this year. See what I did there? Five points for a smooth transition.
When it comes to lunch, we either fumble around for leftovers, find something quick to make, or eat out. So, when I kept reading about the “salad in a jar” craze that is taking over Pinterest, we decided to give it a shot. They keep for 5-6 days, so you can make your jars on Sunday and have them for the rest of the week. Yes–prep once for the whole week. My kind of meal.
We decided on a Greek Chicken Salad, but there are so many options out there!
We started with a couple of tablespoons of an olive oil and vinegar dressing and added tomatoes and cucumbers.
Then, we added olives, dried apricots, and feta cheese.
We topped it off with grilled chicken and romaine lettuce. Simple, guys. When you are ready to eat, you just shake it into a bowl and enjoy!
I’m excited about having my lunch prepped for the whole week! And, while I may be eating the same thing for lunch all week, I don’t have to even think about it, so the trade off is totally fine.
Salad beats fries all day long.
