Yum-O Broccoli Soup

I made broccoli cheddar soup for dinner tonight and it was oh-so-good. How can I not share the recipe with you? I felt like Martha Stewart today–lots of laundry and homemade soup. Check!

I got the recipe from food.com:

Panera Broccoli Cheese Soup

  • 1 tablespoon melted butter
  • 1/2 medium chopped onion
  • 1/4 cup melted butter
  • 1/4 cupflour
  • 2 cupshalf-and-half cream (I used 1/2 h&h and 1/2 milk)
  • 2 cups chicken stock
  • 1/2 lbfresh broccoli
  • 1 cup carrot , julienned (I shredded mine)
  • 1/4 teaspoon nutmeg
  • 8 ounces gratedsharp cheddar cheese
  • salt and pepper

Directions:

  1. Sauté onion in butter. Set aside.
  2. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half & half.
  3. Add the chicken stock. Simmer for 20 minutes.
  4. Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes.
  5. Add salt and pepper. Can be puréed in a blender but I don’t. Return to heat and add cheese. Stir in nutmeg.

      It is so good! I don’t think it taste like Panera, but it’s still great on a cold day!

    Hey! Just letting you know I’m knocking off your 15-minute Goodwill Challenge tomorrow for Wardrobe Wednesday (and properly crediting you, of course : )).

    Also, in answer to your preggo fitness questions.

    A) Congrats! : ) (I’m assuming its you, right?)

    B) Walking is always safe, even power-walking up and down hills, etc. as long as you’re not a high-risk pregnancy.

    Yoga could be pretty good too, if you stick with the stretching variety rather than the power yoga. (They have pregnancy yoga videos on Amazon, and you can read the reviews to see which ones are good).

    You’d also be fine with light weight-lifting. Lots of reps with super-low weights (like 1-3 lbs).

    Honestly, you can do a “version” of most anything as long as you don’t feel pain, stress, overheating, etc.

    Your body will talk to you. The important thing is to listen! : )
